Re-Console comes with a lot of mods, but if you'd like to improve performance, heres some tips.
Change your Minecraft settings
General
By default, Re-Console does change some settings to match accuracy to LCE. You can start by changing your render distance. By default, Re-Console sets your render distance to 18, which is the default on the last generation of consoles Legacy Console Edition ran on. This can be pretty demanding however, and if you cannot run this, you can actually still get some form of LCE accuracy by going to 10 render distance.
After this, you can change your simulation distance. Re-Console sets this to 8 by default. This is the distance in chunks that entities, blocks and other moving things are ticked, meaning that things like farms outside of this distance may not work properly. You can set this to 5 for better performance, however on singleplayer, it may break farms. This does not impact servers however.
By default on Re-Console, V-Sync is turned off. I recommend keeping V-Sync turned off unless you notice screen tearing, which in that case, turn it on or use Adaptive V-Sync which can be found in Mods>Minecraft>Video Settings

Quality
You can also set graphics quality to “fast” on low-end systems and “fancy” on mid-range to high-end systems. This will affect if leaves are transparent or not, weather particles, and other things of the sort. However, Fabulous is not supported by Re-Console, as Re-Console uses Sodium. Do not enable this unless you absolutely need its minor changes.
You can also set particles to minimal/decreased
on low-end systems.
If all else fails..
If none of these options work for you, I recommend you install Re-Console Lite instead.
Other ways to improve performance
Reduce Resolution on MacOS
If you're on a Mac with a Retina display, it is heavily recommended to enter the Sodium options menu (Mods>Minecraft>Video Settings>Extras), and enable the "half resolution" option under the "Extra" tab. You will have to restart the game after turning this on! This can boost FPS from ~100 to >200, based on others testing.
Adjust Memory (RAM) allocation
Allocating more memory to Minecraft may increase performance very significantly, as seen in Forestplayz review of Re-Console, that suffered from performance issues due to low memory allocation.
However, setting it too high can cause issues as well. It may start to slow down your game if you go above 8GB (8192mb), due to Java not being able to handle that high of an allocation properly.
If you have a low amount of memory installed, do make sure to keep enough memory for your system. A good rule of thumb is to allocate 2-6 GB (2048-6144 MB) to Re-Console depending on your configuration, settings, and system hardware. Other modpacks may require more RAM allocated.
Never set your allocated memory to the same amount as your installed memory.
